Smoked Spatchcocked Turkey | Freak Yeah
Unbelievable smoked turkey cooked on a drum smoker.
Freak yeah! Thanksgiving holiday turkey made easy and delicious!
Prep time: 10 minutes
Cook time: 2.5 to 3.5 hours at 350°, depending on turkey size
Cleanup time: 5 minutes
Ingredients:
- 1 14-20 lb turkey, thawed
- Real mayonnaise
- Seasonings
- 1 quart chicken broth (for roasting pan)
Preparation:
- Light pit, add a mild smoke wood if desired, and bring to 350-375°
- Remove and reserve giblets from turkey
- Pat turkey dry with paper towels
- Spatchcock turkey, removing the spine, tail and extra skin
- Coat with mayonnaise
- Season turkey as desired
- Place reserved giblets in a disposable roasting pan with 1 quart chicken broth
Process:
- Place roasting pan on a grate in the center position
- Place turkey on a grate in the top position, skin side up, directly over pan
- Cook at ~350° until internal temperature of turkey reaches ~170° in breast and thighs
